Banana Pancakes

If you think pancakes are unhealthy and are only reserved for naughty days, think again! With this simple vegan breakfast meal, you can enjoy the delicious taste of pancakes without having to worry about piling on the pounds. And there’s no limit to your toppings; simply load up your pancakes with all your favorite fruit and nuts, or drizzle on some maple or agave syrup to add extra sweetness to your day.

Ingredients
  

  • 1 Banana
  • 1 cup Gluten-free oatmeal
  • 1 cup Non-dairy milk Almond recommended
  • 2 tbsp Baking powder
  • 12 tbsp Cinnamon
  • 1 tbsp Coconut oil For cooking

Instructions
 

  • Put all the ingredients, except the oil, into a mixing bowl and combine using either a hand-blender or a fork, until you have the consistency of pancake batter. Set to one side.
  • Melt the coconut oil in a pan over medium heat. Once hot, add the batter slowly to make 5 inch wide pancakes.
  • Place the lid on the pan and cook the pancakes for 2 minutes on each side.
  • Remove pancakes and put them directly onto a plate.
  • Serve with your favorite healthy toppings.

Notes

Serving Suggestion: try adding a dollop of non-dairy vanilla yogurt and some strawberries on top of your pancakes to make this simple vegan breakfast meal extra tasty!
